Do you ever feel bad for apples this time of year? Just a little?
Ok, I know it’s totally weird to feel for a fruit, but I have a very compassionate heart, okay? 😉
It’s just that September/October is such a GLORIOUS time for apples, yet they always seem to take the back seat to pumpkin this time of year.
While I am a bit of a pumpkin fanatic myself, and have some crazy awesome pumpkin recipes up my sleeve for you later this fall, I’m trying my darndest to give apples the time they deserve in the spotlight.
It also helps that I’ve found myself slightly apple obsessed so far this September. Apple crisps and Apple Pie Granola have been coming out of my oven at almost alarming rates, my daily afternoon snack is an apple or two (yes, two) slathered in almond butter, and Apple Butter Overnight Oats have been breakfast more times than I can count on my fingers and toes.
Naturally with all the apple obsessing going on in our household, a huge heaping scoop of that that heaven-sent apple butter I mentioned using for
everything my apple pie granola ended up in my overnight oats jar one evening, and my life was basically forever changed the next morning.
Rich, comforting apple pie flavor first thing in the morning, with ZERO work other than unscrewing the jar? I mean, how can that NOT transform your life/taste buds forever?
Other than being 100% effortless in the morning (so needed!), one of the things I love most about this overnight oats recipe is that it is equally amazing straight out of the refrigerator or heated up. Perfect for these transitioning fall days!
One morning last week it was a sticky, humid 76 degrees when I headed out the door to the gym at 6am (uuuugh), but then yesterday morning? A crisp 54 degrees. Needless to say, last week it was COLD apple butter overnight oats for breakfast, but this weekend/week it’s been warm, steamy apple butter overnight oats and a big, fat latte in the mornings. Both weeks: exactly what the doctor ordered on equally beautiful September days.
While I realize that approximately 80% of the appeal of overnight oats is that they are an easy, grab-and-go, no-fuss required breakfast, I highly, highly suggest taking a few minutes to jazz ‘em up with some sautéed cinnamon apples. It only takes a few minutes (scout’s honor!) and really seals the deal on these being the best overnight oats ever.
If you’re one of those super-on-top-of-life people (teach me your ways!), you could sauté the apples the night before, and then warm them up with the oats in the morning! If I’m being completely honest that will probably never be me, but a girl can dream that she’ll have it that together one day 😉
Sooo who’s with me on the apple train? (Don’t worry pumpkin, I still love you.).
- 1 cup certified gluten-free rolled oats
- 1 ½ cups unsweetened almond milk (or other milk of choice)
- ⅓ cup apple butter
- ¼ teaspoon cinnamon
- ¼ teaspoon apple pie spice (or more cinnamon)
- In a medium bowl, thoroughly combine all ingredients.
- Divide the mixture between two 12-ounce mason jars. Cover tightly with a lid.
- Place in the refrigerator overnight, or for at least 8 hours.
- Open, stir, top with favorite toppings (I suggest sauteed apples and walnuts or pecans), and enjoy!
