Chocolate Avocado Pudding is the ultimate healthy dessert. It’s quick, easy, made of only 100% pure ingredients, yet it’s sinfully rich and creamy. Gluten-free, dairy-free, and vegan, too! You really can’t ask for any more from a health food masked as a dessert.
My husband and I just returned from two glorious weeks in Italy (Milan, Venice, Florence, and Rome!) and I am already planning our return trip. The travel bug has bitten HARD.
And, as I’m sure you are wondering, Italy, the “land of bread and pasta” is SO celiac friendly. Seriously! I can’t wait to share all my gluten-free travel tips with you, my “must eats” in each city, and lots of Italian inspired recipes. Be on the lookout!
Buuuut now that we’re back and I don’t have “vacation” as an excuse to eat a minimum of 3 scoops of gelato a day (wiiiish I was exaggerating. Ok: I don’t, but my skinny jeans might), drink a minimum of a bottle of wine per day, and stuff my belly to the max with gluten-free pasta, we’re trying to detox just a tiny bit.
Can you hear my liver’s sigh of relief from all the way over there? Bet you can 😉
Though it’s time for the gelato habit to take a quick break, my sweet tooth never, ever does. I’ve found that just about the only way I can stay on track when trying to eat a little better is to find dessert hacks that taste sinful, but are made from wholesome, natural ingredients. Because when the sweet tooth comes a knockin’, Leah starts a chompin’.
And let me tell you: Chocolate Avocado Pudding is God’s gift to sweets obsessed people (insert hand raised emoji here) who have over-consumed all of the Italian goodies and need to take it easy for a bit (double hand raised emoji).
I know: avocado and pudding sound like two things that should never go together, but you’ve GOT to trust me on this one.
One of my coworkers tipped me off to Chocolate Avocado Pudding a few months ago when I was lamenting about how I would never, ever, ever be able to pull off the paleo diet or anything like it because dessert equals life. (Duh.)
She asked if I had ever heard of it/tried it, and of course I said NO, my eyes got really big, and I proceeded to barrage her with a million avocado pudding related questions until she had exhausted every last ounce of knowledge she had on the matter. (Oh heavens. I’m “that girl” aren’t I?!)
The gist of what she told me was this: it’s the creamiest, richest pudding you have ever had and it’s made from only pure, whole foods – totally guilt-free! You just take an avocado, your sweetener of choice, cocoa powder, vanilla, and some almond milk and whir it all up together in your food processor.
Of course within milliseconds of getting home the food processor was out, the ingredients were in, and my life was made.
This pudding is everything. It is soooo easy to make and takes seriously all of 3 minutes from start to finish. The taste and texture? Oh my goodnesssss. This is supposed to be a replacement for chocolate pudding but it’s actually BETTER than the original in every.single.way. It’s richer. It’s creamier. And you guys — IT’S HEALTH FOOD.
OK, yes, it’s still technically dessert, and it’s still technically full of calories, but it’s the good, healthy kind of calories. It’s packed with good fats, it’s nutrient dense, and it’s a dessert that actually has some serious staying power. As in, it could double as dinner! It’s that healthy and filling.
Warning: your husband miiiiight look at you like you have fallen off your rocker when you try to convince him that pudding is what’s for dinner, but reallllly, it’s essentially just avocado with a few small additions, and we’ve been known to make meals of Mango Avocado Salsa and it’s not that much different, right? right?
…. ok, I’ll just keep telling myself that 😉
I love experimenting with different toppings for the pudding, because, in my opinion, pudding always needs some pizazz. My go-to is coconut flakes, nuts, and mini chocolate chips (if I’m eating avocado for dessert, that means I get to splurge just a little right?) but I also love adding fresh berries when I have them on hand — raspberries and strawberries are killer with this pudding!
If you want to get really crazy, go ahead and add a big ol’ dollop of coconut whipped cream or almond butter. You won’t regret it.
If this is what “healthy eating” and “detoxing from vacation” is all about, then I’m soooooo in.
- 1 medium, ripe avocado
- 2 Tablespoons organic cocoa powder
- 2 Tablespoons almond milk
- 2 Tablespoons maple syrup (or honey/agave for paleo)
- 1 teaspoon gluten-free vanilla extract
- ¼ teaspoon cinnamon
- pinch of salt
- Toppings of choice
- Add all of the ingredients to a food processor, and blend until smooth - about 1 minute. If the pudding looks thick, add 1 teaspoon of almond milk at a time, until you reach your desired consistency.
- Refrigerate for at least 1 hour.
- Scoop into dishes, add desired toppings, and enjoy!
