Gluten-Free Slow Cooker Beef Stew

Serves: 6-8
  • 2 lbs Beef Cubes
  • 1 tsp salt
  • 1 tsp fresh ground black pepper
  • 2-3 large carrots
  • 1 large onion
  • 4-5 small potatoes
  • 3 cloves garlic, minced
  • 4 cups gluten-free beef broth (32oz container)
  • 1 6oz can tomato paste
  • 2 Tablespoon Worcestershire sauce
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 sprig rosemary
  • ¼ cup gluten-free flour blend
  • ¼ cup water
  1. Season beef cubes with salt and pepper.
  2. Cut potatoes, carrots and onions into 1-2 inch cubes and place in the slow cooker.
  3. Add the garlic, beef broth, tomato paste, Worcestershire sauce, oregano, and basil to the slower cooker, stirring well.
  4. Add the beef cubes, and make sure all cubes of beef are mostly submerged in the liquid.
  5. Add the sprig of rosemary to the top.
  6. Cover and cook on high for 2 hours, and then reduce the heat to low and continue to cook for another 5-6 hours *
  7. In a small bowl, combine the gluten-free flour with the water, and stir to make a slurry. Remove the rosemary sprig, and then add the slurry to the slow cooker, stirring well.
  8. Replace the lid, and cook on low for another 30 minutes.
You can also cook this on low-only for 10 hours, or on high-only for 6-7 hours.
