Raspberry Bark

Serves: 4 cups
  • 12 oz. high quality white chocolate, chopped
  • 8 oz. high quality dark chocolate, chopped
  • 1 cup freeze-dried raspberries, slightly crushed
  1. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Melt the white chocolate and dark chocolate separately, using either a double boiler or the microwave. If using a microwave, be sure to stop and stir the chocolate every 30 seconds to keep it from burning and seizing.
  3. Once completely melted, pour the white chocolate onto the parchment or silicone lined baking sheet, spreading it into a thin, even layer. Very carefully and gently, drizzle the dark chocolate over the white chocolate in lines vertically and horizontally.
  4. Using toothpick or small knife, gently pull through the chocolate in a zigzag pattern to create a design on the top of the bark.
  5. Immediately sprinkle the crushed freeze-dried raspberries over the bark.
  6. Allow the bark to harden by leaving the bark on the counter until completely set, about 1-2 hours. You can also place the pan in the refrigerator (just make sure it’s level!) for 15 minutes to accelerate the cooling process.
  7. Once the bark is set, break the bark into chunks with your hand, until they are your desired size.
  8. Enjoy!
