Gluten-Free French Toast Roll Ups

Ingredients
  • 12 slices gluten-free Canyon Bakehouse Mountain White Bread
  • ⅓ cup Nutella or other chocolate spread
  • 2 eggs
  • 2 Tablespoons milk
  • ¼ teaspoon cinnamon
  • ¼ teaspoon gluten-free vanilla extract
  • 2 teaspoons sugar
Instructions
  1. Cut the crusts off of the gluten-free bread. Using a rolling pin, gently flatten and roll out each slice of bread. Spread ½ Tablespoon of Nutella on each slice of bread. Tightly roll up each slice, Nutella side in.
  2. In a small shallow bowl, whisk eggs very well. Add milk, cinnamon, gluten-free vanilla, and sugar, continuing to beat well until combined.
  3. Heat a large skillet over medium heat. Dip the rolled bread into the egg mixture, coating well. Place the rolls on the skillet, turning slightly every 15-20 seconds, until cooked through and slightly browned all the way around on the outside.
  4. Remove from the pan, and enjoy!
