Spicy Baked Sweet Potato Fries

Serves: 4
  • 2 large sweet potatoes
  • 3-4 Tablespoons cornstarch
  • ¼ cup olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ⅛ teaspoon cayenne pepper
  • 1 teaspoon salt
  • ½ teaspoon fresh cracked black pepper
  1. Preheat your oven to 425℉. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Peel your sweet potatoes, and cut into thin wedges, about ¼ inch thick and wide and the length of the potato.
  3. In a very large bowl, submerge the cut sweet potatoes in cold water for 30 minutes to an hour. Remove from the bowl and dry very well.
  4. In a small bowl, combine all of the spices and set asde.
  5. In a very large bowl with a tight fitting lid or a large zip-top plastic bag, place the sweet potatoes, and then toss with the cornstarch, until all wedges are evenly coated. I usually do this in two batches to more evenly distribute the corn starch.
  6. Drizzle the cornstarch coated sweet potatoes with olive oil, tossing well, and then add the spice mixture and toss well again.
  7. Evenly place the sweet potatoes on a baking sheet, making sure not to crowd them together, and make sure that none of the wedges touch.
  8. Bake for 20 minutes, then flip the sweet potato fries, and bake for another 15-20 minutes or until golden and crisp on the outside.
