Apple Pie Granola

  • 2 cups gluten-free old fashioned rolled oats
  • 1 cup chopped pecans
  • ½ cup sliced almonds
  • 1 ½ cups chopped walnuts
  • 2 tsp cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon allspice
  • ¼ teaspoon ginger
  • ⅔ cup apple butter
  • ⅓ cup coconut oil
  • ⅓ cup honey
  1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper or a baking mat.
  2. In a large bowl, combine rolled oats, pecans, almonds, walnuts, cinnamon, nutmeg, allspice, and ginger.
  3. In a separate small bowl, combine apple butter, melted coconut oil, and honey.
  4. Pour wet ingredients over dry ingredients, mixing thoroughly. Spread out granola mixture on the parchment-lined baking sheet evenly.
  5. Bake for a total of 45 minutes, until granola is golden brown, stopping to stir at 15 minute intervals - 15 minutes and 30 minutes.
  6. Remove granola from the oven, but DO NOT STIR. Once cool, break the granola up and store in an airtight container.
