Apple Butter Overnight Oats

  • 1 cup certified gluten-free rolled oats
  • 1 ½ cups unsweetened almond milk (or other milk of choice)
  • ⅓ cup apple butter
  • ¼ teaspoon cinnamon
  • ¼ teaspoon apple pie spice (or more cinnamon)
  1. In a medium bowl, thoroughly combine all ingredients.
  2. Divide the mixture between two 12-ounce mason jars. Cover tightly with a lid.
  3. Place in the refrigerator overnight, or for at least 8 hours.
  4. Open, stir, top with favorite toppings (I suggest sauteed apples and walnuts or pecans), and enjoy!
