Pumpkin Spice Baked Oatmeal

  • 1 ½ cups certified gluten-free rolled oats
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • ¼ cup brown sugar
  • ½ cup almond milk
  • 3 tablespoons maple syrup
  • ½ cup pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  1. Preheat oven to 350 degrees F. Lightly spray a 1 quart baking dish with cooking spray and set aside.
  2. In a large bowl, combine oats, baking powder, salt, pumpkin pie spice, and brown sugar; mix well and set aside. In a separate bowl, thoroughly combine the milk, maple syrup, pumpkin, egg, and vanilla extract. Add the wet ingredients to the dry ingredients, mixing well.
  3. Spread the oatmeal mixture into the bottom of the prepared baking dish.
  4. Bake for 25-30 minutes or until the edges are golden brown.
  5. Immediately spoon into bowls, add desired toppings, and enjoy!
