Gluten-Free Oatmeal Raisin Skillet Cookie

  • 1¼ cup all-purpose gluten-free flour blend
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 Tablespoon cinnamon
  • ½ cup dairy-free soy-free butter, softened
  • ⅓ cup granulated sugar
  • ⅔ cup light brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1½ cups certified gluten-free rolled oats
  • ½ cup raisins
  1. Preheat oven to 325 degrees F. Lightly grease a 9” cast iron skillet.
  2. In a large bowl, whisk together the gluten-free all purpose flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a stand mixer, beat softened butter on low until creamy. Add in the granulated sugar and brown sugar, and mix until fluffy. Add the eggs and vanilla and mix until smooth, scraping down sides of the bowl to make sure everything is fully incorporated.
  4. Add in the flour mixture and mix until fully combined. Add in the oatmeal and raisins, and mix just until combined.
  5. Spread cookie dough into greased skillet and bake for 25-35 minutes or until the edges are golden brown, but the middle is still slightly underbaked and gooey.
  6. Allow the cookie to cool for at least 10 minutes, then grab some spoons, dive in, and enjoy!
