What better way to celebrate the arrival of spring than with Gluten-Free Bird Nest Brownie Bites that are almost too cute to eat…. almost.
SPRING HAS SPRUNG! š
Ok, maybe not really as itās a whopping high of 44 degrees today here in Philly (š), but technically Spring is here! And as you know from my last post, I couldnāt be more excited.
I mean – waking up to BIRDS CHIRPING?! – could it get any more perfect/Cinderella than that?!
Speaking of birdies, how perfect are these Bird Nest Brownie bites? The ultimate way to welcome spring, if you ask me.
I donāt know about you, but I tend to go absolutely gaga over adorable little themed goodies. Iāll take just about any excuse to whip up something festiveĀ š (hellooo star-spangled shortbread cookies, jolly holly cocktails, peeps popcorn, patriotic cake batter puppy chow, and brownie mint truffles).
Only problem? Sometimes theyāre just too cute to eat. ā I totally feel that little manās pain, Donāt you?
Ok, cuteness has never actually stopped me from consuming themed treats, especially ones that are as sinfully delicious as these bird nest brownie bites, but it may have given me pause a time or two.
Aside from their adorableness, the ease of creation might be the very best thing about these gluten-free bird nest brownie bites. AND they are the perfect treats to have your little ones help prepare! They CAN get a bit sticky and messy with little hands involved, but thatās half the fun, right?
Thanks to Canyon Bakehouseās incredible gluten-free brownie bites, there is absolutely ZERO baking involved in this recipe. Itās simply a matter of assembly!
Youāll just need to toast up some unsweetented shredded coconut – and yes, UNsweetened is key here! – mix it with some gluten-free caramel sauce, pile the brownie bite high with the coconut caramel mixture, make a well in the middle for the chocolate āeggsā, and then top it off with a few of the chocolate candies.

I spotted some adorable egg-shaped Easter M&Ms (those lovely vibrant spring colors!) that I knew I just HAD to use for the chocolate āeggsā, but feel free to use whatever gluten-free egg-shaped chocolates you can find/love. The ones with almonds or peanuts in the middle would work well too if you were in a pinch/ making these outside of Easter candy season.
You can, of course, bake your own brownie bites for this recipe using a mini muffin tin, but honestly, why go to the trouble if you can get your hands on Canyonās? brownie bites (Theyāre just as good as any homemade Iāve had!) As you may remember, the name of my game is SIMPLICITY in 2016, so Iām all about any [delicious] shortcuts I can take!
Gluten-Free Birds Nest Brownie Bites are the PERFECT way to celebrate spring (even if, like me, you are shivering a bit more than youād like) and would be a great addition to your Easter dessert spread! š£
Donāt forget the Gluten-Free Hot Cross Scones and Gluten-Free Carrot Cake Donuts, too! š
- 1 package Canyon Bakehouse Brownie Bites (9 brownies)
- 1 cup unsweetented shredded coconut flakes, lightly toasted
- ½ cup gluten-free caramel sauce
- Chocolate egg shaped candies
- In a small bowl, combine the toasted unsweetened coconut flakes and caramel until evenly mixed.
- Top each brownie bite with approximately 1 ½ Tablespoons of the caramel coconut mixture, leaving a small well towards the center of the brownie bite.
- Place 2-3 chocolate egg-shaped candies in the center of the caramel mixture on top of the brownie
- Allow the bites to set for 15 minutes before serving.

Seriously, can we just stop with the cold weather, Philly? Did it really need to SNOWWWW overnight?! Killin’ me!! But this is a wonderful way to welcome the warm weather and the chirping birds, for sure! Sometimes I, too, feel bad for eating really cute foods, but then they usually taste really good and I forget what I was feeling sad about in the first place. Love that these don’t involve any baking! Hooray for easy treats!
