Isn’t it funny to think about the things that get you excited as you get older? I’m pretty sure the last little shred of my inner teenager died the moment I absolutely squealed with delight when my pump showed up last week.
Lately for me it’s been endless squeals over each new mouthwatering gluten-free slow cooker recipe and gluten-free freezer meal recipe I find.
Since our little boy is arriving in just a couple short weeks (SAY WHAT?!) I’ve been scouring the interwebs for highly rated, easy gluten-free freezer meals that I can prep now to make our transition into parenthood as easy as possible (don’t worry, I’ve already been warned that “parenthood” and “easy” should never be in the same sentence without the word NOT).
Since I know many of you are in the same freezer meal frenzy as I am for one reason or another – back to school, new mom, upcoming surgery, etc. – I decided that it was about time I shared my research so we could squeal in delight together.
Without further ado, here are my top 13 favorite gluten-free freezer meals for new moms (or really anyone, for that matter!):
Slow-Cooker Pulled Barbecue Chicken: The #1 go-to crockpot meal in our household. Just freeze everything together ahead of time, and then thaw and pop in the slow cooker! You’ll be AMAZED at how good this one is, especially for the minimal prep.
Healthy Cheesy Chicken Broccoli Rice Casserole from Well Plated: This twist on the classic is super healthy, made completely from scratch (but still super easy!) with no cream of anything soups AND it freezes so, so well. Erin, I owe you a BIG hug for this one!
Crockpot Turkey Meatballs from Sally’s Baking Addiction: We all know that anything Sally makes is magic, right? Well friends, this girl can cook just as well as she can bake. LOVE these freezer friendly turkey meatballs!
Gluten-Free Buttermilk Waffles: Whenever I make waffles I always double the batch and freeze half in freezer baggies. When you’re ready to eat them, just pop one in the toaster and viola! Breakfast is served. Plus, these are about 5,000x better than anything in the freezer aisle!
Roasted Tomato Basil Soup from Two Peas and Their Pod: This tomato basil soup freezes beautifully, and is perfect for the chilly fall and winter months ahead. I’ve also been known to use this as a marinara sauce!
Gluten-Free Coconut Chicken Tenders: Anthony’s favorite meal that I make, and luckily it freezes amazingly! After the tenders are prepared, transfer them to a freezer bag, suction the air out, and freeze them for up to 3 months. When you’re ready to eat, reheat them in the microwave or heat them in the oven, just like you would with store-bought frozen chicken tenders/nuggets.
Salsa Verde Beef Tacos: I thought these tacos couldn’t get any better or easier to make, until I stuck some extra meat in the freezer to enjoy later. Just let the meat thaw in the fridge and then reheat and BAM – flavor filled dinner is on the table in record time!
Meg’s Picante Chicken Chili: My absolute favorite soup to freeze, as I swear it gets better over time. Yes, even in the freezer! Just make according to the directions and freeze in freezer bags or in a large tupperware container, thaw, reheat, and dig in!
Slow Cooker Beef Stew: Another one of those meals that I swear was made for the freezer! The flavors deepen and develop over time in the freezer, making it almost better than the first time around. Freezer win!
Chicken Parmesan Casserole from Thriving Home: I made a few batches of this for my mother-in-law before she had her knee replacement surgery so she didn’t have to worry about cooking, and it received rave reviews! Just make sure to use gluten-free bread crumbs (← making your own is so easy!)
Sweet Potato Black Bean Breakfast Burritos from Ambitious Kitchen: Breakfast truly is the most important meal of the day, so make sure to always have an easy freezer breakfast item on hand for those crazy busy days. These breakfast burritos are phenomenal, and make a great breakfast for dinner, too.
Gluten-Free Mushroom Ranch Pasta Bake from Cricket’s Confections: I am an absolute sucker for pasta bakes, so obviously a few rounds of this Gluten-Free Mushroom Ranch Chicken Bake are going to be stashed away in my freezer. So yummy!
Taco Meat from There Is Life After Wheat: Taco meat is something I love to have already prepared and hiding away in the freezer. It’s so easy to reheat and throw on a salad or a gluten-free tortilla. A meal in just a few minutes – can’t beat that! Also, I love Celeste’s addition of tomato sauce and green chilis! Makes a huge flavor difference.
