Wondering how to cook quinoa in the Instant Pot? It’s easy as 1…. 2, 3! And perfect every time.
Posting this as a “recipe” kind of feels like cheating.
Why? Because it’s all of two ingredients and insanely simple. As in no work, no thinking, a monkey could do it simple.
But I decided that what I’d really be doing is cheating you if I didn’t post this “recipe.”
Are you ready for how easy this is? No really, are you ready? Because this is hold-on-to-your-chairs shockingly simple:
Put 1 cup of rinsed quinoa in the Instant Pot with 1 ½ cup of chicken broth (or vegetable or even water), put the lid on (set to seal) and set the IP to manual, high-pressure, for 1 minute.
Ok, it’s a little more than 1 minute when we’re talking total start-to-finish cook time – you’re going to want to let the pressure naturally release for at least 12 minutes – but it’s completely hands off time. No waiting for the broth to boil, no watching the stove, no constant temptation to sneak a peek and lift the lid to see if it’s done. None of that. Just dump, set, forget.
And then viola! Perfectly cooked quinoa.
Embarrassing confession: I kind of suck at making quinoa on the stove top. It’s always either a little overdone and toasty on the bottom or a little underdone and watery/sticky, no matter how diligent I am. But with the Instant Pot, the quinoa is perfect every.single.time.
And the very best part? You can leave your kitchen/house while the quinoa is being cooked! For a full-time working mom, this is maybe the best part of the whole recipe. If I need to run a quick errand after work (which is often, and majorly cuts into dinner prep time), I love that I can set the quinoa to cook and then waltz right out of the house without a care in the world.
Instant Pot Quinoa for the win, all around!
- 1 cup qunioa, rinsed well
- 1½ cups chicken broth (or vegetable)*
- Combine the quinoa and broth in the Instant Pot. Place the lid on, being sure that the valve is set to "sealing".
- Select "Manual" on your Instant Pot, and set the cook time for 1 minute.
- Allow the pressure to release naturally for at least 12 minutes. After that time, move the valve to "venting" to release any additional pressure, remove the lid, and fluff the quinoa with a fork.
- Serve, and enjoy!
